banana bread kind of day

i made THE easiest banana bread. 
it was a little messy but I think that's because I have a tiny kitchen.
We bought a skinny shelf from Ikea to squeeze in to fit all of our pantry supplies.

Yes. 
My toaster is on the ground next to the lamp in the living room.
Yes.
My coffee maker is behind the TV in our living room right next to my hair dryer.
and yes.
I have to mix in my bowl on my chair because it's near one of the few outlets.
i still love my kitchen:)




I bought my mixing bowls from Williams Sonoma a long time ago as a present to myself when I was going thru some times.
I remember I walked in and picked up a set of three yellow cheery bowls and they counterperson asked if she should wrap it up. Was it a present?
I told her to wrap it right up! and i picked up my gift for myself after work:)

I had bananas sitting around and a sleepy husband which equals: surprise husband with banana bread for breakfast!  Poor thing has been driving 5 hours every weekend back and forth to visit me as he awaits his transfer. It was a mushy affair but with a delicious outcome.
I basically typed in easy banana bread and found this one:


Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 2 1/3 cups mashed overripe bananas


Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
  3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

~I used about five bananas and maybe I added a little extra bit of sugar:)








I gave a few pieces to a friend and brother and poof! it was gone in less than a day. I had a slice...or two:)

I've got beer bread in the oven as I type, but I cannot wait to try this out but I think I need another banana or two.
